Fool proof pizza dough

It's hard to beat homemade pizza crust. This fool-proof, quick & easy recipe can be made days in advance. You can even freeze the dough for months to use later. Have it thin, have it thick. With raw pizza dough, have it any way you like it!



4 ½ cups (684g) all-purpose flour, chilled
1 ¾ tsps (11g) salt
1 tsp (4g) instant yeast
¼ cup (54g) olive oil
1 ¾ cups (400g) water, ice cold


  1. On the lowest speed in an electric mixer with a dough hook attachment, start stirring the dry ingredients together. 1 minute
  2. Drizzle in a gradual manner the ice water and olive oil. 1 minute
  3. Let the electric mixer run 7-10 minutes. The dough should come together. It should not stick to the bowl. 10 minutes
  4. Divide into 8 equal pieces. 1 minute
  5. Place each piece in a plastic bag with a little bit of olive oil. Refrigerate overnight, or freeze immediately. 1 minute
  6. Your dough is ready the next day. Before using the dough, allow the dough to rest at room temperature for 2-4 hours, depending on whether it was refrigerated or frozen. 1 minute
