Zha Jiang Sauce

4 (g) garlic clove, finely minced
3 (g) shallot, small
cup (g) sweet bean paste
1 ¾ cups (g) ground meat, vegetarian
1 cup (g) water
4 tbsps (g) canola oil

Noodles and Garnish

3 cups (g) Asian noodles
2 (g) carrot, julienned
2 (g) cucumber, julienned
6 (g) quail egg
20 sprigs (g) cilantro
6 tbsps (g) fried onions


  1. In a saucepan, heat the canola oil on high heat.
  2. Saute the garlic and shallots for 1-2 minutes. Turn the heat down to medium high heat.
  3. Add the ground meat and saute for 1-2 minutes.
  4. Add the sweet bean paste and water, mix thoroughly. Simmer on medium for 10-12 minutes. Cook longer if using animal-based ground meat.
  5. While the sauce is cooking, cook the noodles according to its package directions.
  6. Assemble the bowls with the noodles at the bottom, topped with the zha jiang sauce, carrots, cucumber, quail eggs, chopped cilantro and fried onion. Serve immediately.
