Preserved lemon

Preserved lemons are versatile in dishes or desserts. Try it with pasta to brighten up the dish, or top it on vanilla ice cream. The possibilities are endless!


All Ingredients

4 (232g) lemon
2 tbsps (24g) sugar
1 tbsp (12g) salt
1 cup (216g) olive oil


  1. Slice the lemons as thinly as possible and keep slices in order to reform the lemon. 10 minutes
  2. Between each slice of lemon, sprinkle salt and sugar, alternating the salt and sugar. 10 minutes
  3. Place lemon in a container and refrigerate for 24 hours. 1 day
  4. After 24 hours, the lemons will have leached a lot of juices. Drain out this juice and replace with olive oil. Try to cover the lemons with the olive oil. 1 minute
  5. Refrigerate for 3 days. 3 days
  6. Drain the olive oil and reserve for something else. You can continue to store the lemons in the refrigerator, or you can freeze them for later use. 1 minute
