Spicy roasted heirloom tomato salsa

This super easy salsa really brings zest to all your dishes. Try it on tamales, burritos, or add it to some store bought guacamole. This batch can last a week in the refrigerator or make it for a get together and serve with tortilla chips! The possibilities are endless with salsa.



2 lbs (908g) heirloom tomato
10 (164g) jalapeno pepper, small
1 (369g) onion, large
6 cloves (33g) garlic, large
15 sprigs (30g) cilantro, fresh


  1. Preheat the oven to a high broil temperature.
  2. Cut the onion into large rings.
  3. In a baking pan lined with foil, place the onion rings and garlic cloves in one layer.
  4. Place the garlic and onion in the oven on the top level and broil for 5 minutes. Be sure to keep an eye and check intermittently. You want to roast the onion and garlic, but not burn them completely. There will be some spots that will be charred, which is okay, just don't completely burn them.
  5. While the garlic and onion is roasting, in another baking pan lined with foil, place the tomatoes and jalapeno peppers on top.
  6. When the garlic and onion is ready, remove pan from oven and allow it to cool.
  7. Place tomatoes and peppers in the oven on the top rack to roast for 5-10 minutes. Halfway through, use tongs to flip each tomato and pepper, so both sides are roasted
  8. When the tomatoes and peppers are finished roasting, remove from oven and allow to cool.
  9. When the ingredients have cooled sufficiently, place all ingredients, including cilantro, into a blender.
  10. Blend until liquified.
  11. Serve immediately or refrigerate for later.
