Pecan Chocolate Chip Cookie

Pecan chocolate chip cookie

A twist on Macadamia Nut Chocolate Chip cookies. Walnuts would go well in this too!

Pecan Chocolate Chip Cookie Ingredients

1 cup (226g) butter
¾ cup (150g) sugar
¾ cup (150g) brown sugar
2 (100g) egg
2 tsps (8g) vanilla extract
2 ¼ cups (295g) all-purpose flour
1 tsp (4g) baking powder
½ tsp (2g) salt
1 ½ cups (270g) chocolate chip, semisweet
1 ¼ cups (125g) pecan, chopped

  1. Preheat the oven to 375F degrees. In an electric mixer with a paddle attachment, cream the butter and sugar (both sugars) until light and fluffy.
  2. Add the egg and vanilla extract and beat until smooth. Scrap the sides down if necessary.
  3. Gradually add the dry ingredients (flour, salt and baking powder) and mix until the dough comes together and well mixed.
  4. Once the dough is ready, mix in the chocolate chip and pecans on the slowest speed.
  5. This recipe makes enough dough to make about fifty 2" cookies. For each cookie, scoop 1 tablespoon onto the cookie sheet and press a little to flatten.
  6. Bake for about 8-10 minutes, depending on how you like your cookies.
  7. Cool and serve while warm or room-temperature.
