Banana Bread with Cacao Nibs

2 (100g) egg, large
cup (70g) confectioner's sugar
1 tbsp (15g) brown sugar
tsp (1g) salt
cup (90g) all-purpose flour
½ tsp (1g) baking powder
7 ¾ tbsps (90g) butter
3 (408g) banana, ripe, pureed
¼ tsp (1g) cinnamon, ground
tsp (1g) clove, ground
tsp (1g) nutmeg, ground
2 tbsps (16g) cacao nib


  1. Preheat the oven for 425F.
  2. Using a whisk attachment on your electric mixer, whip the eggs, sugars, and salt until it turns pale.
  3. On low speed, sift the flour, spice, and baking powder and mix thoroughly.
  4. Melt the butter, then slightly cool.
  5. Combine the banana puree to the melted butter. Mix thoroughly.
  6. On low speed, pour the butter and banana puree into the batter. Mix until smooth.
  7. Using a spatula, fold the cacao nibs into the batter.
  8. Pour into a bread pan. Be sure to grease and flour the pan before pouring the batter. This makes unmolding easier.
  9. Bake for 15-20 minutes or until a toothpick comes out clean from the center.
  10. Serve warm or room-temperature.
