Vegetarian takoyaki

This delicious Japanese snack is commonly served at their annual festivals, but they can be easily made at home. Give it a try!

1 ½ cups (200g) all-purpose flour
2 (100g) egg
3 tbsps (45g) soy sauce
2 cups (473g) water

1 ½ cups (344g) vegetarian shrimp, chopped
2 cups (120g) scallion, finely chopped

  1. Prepare the batter by mixing flour, egg, water, and soy sauce thoroughly with a whisk.
  2. Pre-heat the takoyaki pan on high heat for about 5 minutes and brush each mold with oil.
  3. Once the takoyaki pan is hot, turn the heat down to medium heat.
  4. Fill each mold with batter approximately 90% full.
  5. Sprinkle the shrimp and scallions over each mold of batter.
  6. The edges of the takoyaki should begin to crisp and should be ready to flip. The inside batter should still be runny.
  7. Using a takoyaki pick flip each takoyaki ball completely over and allow the inside batter to run into the hot mold. This will form the other side of the ball, making the takoyaki spherical.
  8. Allow the other side of the takoyaki balls cook and become crispy.
  9. Keep flipping the takoyaki balls and cook until your desired crispiness.
  10. Repeat steps #1-9 until batter is finished.
  11. Serve immediately topped with okonomi sauce, Japanese mayonnaise, and chopped scallions. Try other types of toppings, such as BBQ sauce or ranch!
