Lavender and Honey Ice Cream

Lavender and honey ice cream

This ice cream is lightly sweetened by honey complementing the lovely lavender flavor.


Lavender Milk Infusion

2 cups (500g) milk, whole
¼ cup (7g) lavender, dried
4 tbsps (84g) honey

Honey and Cream

5 (85g) egg yolk
¼ cup (84g) honey
1 cup (240g) cream


  1. In a saucepan, slowly heat the milk, lavender, and honey to a boil. Take off heat and allow the lavender to steep in the hot milk for 5 minutes.
  2. While the lavender is steeping, combine the honey and egg yolks in a large mixing bowl and whisk thoroughly.
  3. Strain the milk with a fine mesh strainer and discard the lavender.
  4. While whisking constantly, slowly pour the milk into egg yolk mixture, tempering the egg yolks.
  5. Return the mixture to the saucepan and gradually heat, while stiring constantly, until the mixture thick enough to lightly coat a wooden spoon.
  6. Once the mixture is thick enough, remove from heat and add the cream. Mix until fully incorporated.
  7. Place the ice cream mixture in the refrigerator and let it chill overnight.
  8. On the next day, pour the ice cream mixture into your ice cream maker and make according to the instructions manual. It should take about 15-20 minutes.
  9. The ice cream should look like soft serve ice cream. Scoop the ice cream into a storage container and freeze until you are ready to eat it.
