Chesapeake quinoa cakes

Our food photographer is from Maryland and loves crab cakes. This is our vegetarian version of crab cakes.

INGREDIENTS

Quinoa Mixture

¾ cup (138g) quinoa, dry
2 cups (237g) water
1 tbsp (14g) butter
2 tbsps (40g) onion, finely diced
2 tbsps (40g) red bell pepper, finely diced
1 clove (5g) garlic, finely diced
cup (70g) mayonnaise
1 tsp (4g) Worcestershire pepper blend
1 tsp (5g) Dijon mustard
1 tsp (5g) parsley, finely chopped
1 tsp (4g) Old Bay seasoning
1 tsp (4g) salt
½ (14g) lemon, juice
1 (50g) egg
1 ½ cups (81g) panko
½ cup (112g) canola oil

Creole Sauce

½ tsp (3g) Dijon mustard
½ tsp (2g) Creole spice
cup (35g) mayonnaise
½ (14g) lemon, juice
½ tsp (2g) brown sugar

INSTRUCTIONS

  1. In a saucepan, bring the water to a boil.
  2. Add the quinoa to the boiling water and lower the heat to a simmer. Cook until quinoa is soft, tender, and the water has completely evaporated. Approximately 15-20 minutes.
  3. While the quinoa is cooking, saute the onion, garlic, and red bell peppers in butter in another saucepan. Cook until vegetables are tender.
  4. In a large mixing bowl, combine the mayo, spices, parsley, salt, and lemon juice together. Mix thoroughly.
  5. When the quinoa and sauted onions are cooled to room temperature, add to the mixing bowl with the mayo and spices. Mix thoroughly.
  6. Add 1/2 cup of panko and the lightly beaten egg to the mixing bowl. Mix thoroughly.
  7. Make cake patties with the mixture approximately 3" in diameter and 1" thick.
  8. Pour 1 cup of panko in a small dinner plate. Cover each cake patty with panko crumbs.
  9. In a saucepan, heat the canola oil to approximately 300F. Make sure there's enough oil to cover half the thickness of each patty, approximately 1/2".
  10. Fry each cake patty until a crisp golden brown on both sides. Allow the quinoa cakes to rest on paper towels before serving.
  11. Serve immediately while hot. Serve with the creole sauce, which is made by simply mixing all the sauce ingredients together. Serve only a little bit of creole sauce per quinoa cake serving. You do not want to overpower the quinoa cakes with the sauce.
