Matcha Madeleines

Matcha madeleines

The slight bitterness of the matcha powder goes incredibly well in this sweet treat. Be sure to use high quality matcha powder.


Madeleine Batter

1 (50g) egg
cup (35g) confectioner's sugar
½ tbsp (8g) brown sugar
tsp (1g) salt
cup (45g) all-purpose flour
¼ tsp (1g) baking powder
4 ½ tbsps (53g) butter, melted and cooled
2 tsps (7g) matcha powder
½ tbsp (8g) butter, melted


  1. In an electric mixer on medium speed, beat the eggs, confectioner's sugar, brown sugar and salt until it turns slightly pale in color.
  2. Lower the mixer speed to low and gradually sift the flour and baking powder into the egg mixture. Mix until thoroughly incorporated.
  3. Grease the madeleine pan with melted butter, using a brush.
  4. Mix the matcha powder and melted butter together.
  5. Pour the matcha butter into the batter and mix until smooth and fully incorporated.
  6. Let the batter rest at room temperature for 15-20 minutes. Preheat the oven to 425F.
  7. Pour the batter into a piping bag with a 1/2 inch plain tip.
  8. Pipe the batter into each madeleine mold. Be sure to divide the batter eveningly.
  9. Bake the madeleines for 4-6 minutes. Do not over bake.
  10. Remove from oven and transfer madeleines to cool on a wire rack.
  11. Best served immediately or you may store them for a couple of days in an airtight container. If you are storing, be sure to allow the madeleines to cool completely.
