Apricot gruyere brulee

This creative appetizer is inspired by Nicholas Cantrel's battle on Iron Chef.


All Ingredients

1 (35g) apricot, ripe
1 slice (28g) Gruyere cheese
1 tsp (4g) sugar


  1. Peel and cut the apricot into quarters.
  2. Divide the cheese to 4 strips and place on top of each apricot piece.
  3. Sprinkle the cheese with a thin layer of sugar.
  4. Using a brulee torch, caramelize the sugar.
  5. Serve immediately.
