Natto Onigiri


Natto onigiri

Natto is fermented soy beans, which has a unique taste. For some, it is love. For others, it is hate. Try and decide for yourself!

INGREDIENTS

Sushi Rice

3 cups (g) sushi rice, dry
5 inches (g) kombu, dry
3 ½ cups (g) water
3 tbsps (g) sake

Filling and Mix-in

½ cup (g) natto
3 tbsps (g) apple cider vinegar
1 tbsp (g) honey
1 tsp (g) salt
tbsp (g) soy sauce

INSTRUCTIONS

  1. Soak the rice and kombu in water, then cook according to your rice cooker manual.
  2. While the rice is cooking, mix together the vinegar, honey, and salt.
  3. Mix the natto and soy sauce together.
  4. After cooking, allow the rice to sit for 15 minutes. Be sure to discard the kombu after cooking.
  5. In a large, flat glass baking dish, place the rice in it and sprinkle the vinegar mixture over the rice.
  6. Using a flat spatula, mix and turn the rice with a cutting motion.
  7. To make the onigiri, or rice ball, prepare a glass bowl of cold water to dip your hands in. The water will prevent the rice from sticking to your hands while you make onigiri.
  8. Scope about 1/4 cup of rice into your wet hands.
  9. Form the rice into a bowl and fill it with half a tablespoon of natto.
  10. Cover the natto with 1/4 cup of rice. Form the shape of the onigiri by cupping your hands together.
  11. You can optionally wrap the rice ball with a strip of seaweed.
  12. Serve immediately, or save for later as a snack!
