Hot, sour, and buttery all together. If you like spicy, this is a versatile sauce that can be used in many dishes. Use it as dip or as barbecue sauce. The most famous use of this sauce is for Buffalo wings, deep fried chicken smothered with this hot sauce. This is a simple and easy sauce to make.


All Ingredients

½ cup (112g) butter
1 cup (237g) vinegar
2 tbsps (24g) cayenne
½ tsp (3g) salt
1 tbsp (12g) sugar
¼ tsp (3g) soy lecithin


  1. Melt the butter on medium heat in a saucepan. 1 minute
  2. Add the remaining ingredients except the soy lecithin. Bring to a boil and simmer for about 3 minutes. 4 minutes
  3. Transfer sauce into a heat proof bowl and whisk in the soy lecithin. 1 minute
  4. The final sauce should look well mixed and a milky orange-red color. The soy lecithin is an emulsifier that keeps the butter and liquid from separating. Use the sauce immediately or store in the refrigerator.
