Vegetarian beef taco

It's amazing how far along the vegetarian meat industry has gone! There are dozens of options when it comes to vegetarian meat. You can find it in the frozen, refrigerated, or bulk sections. In this recipe, I've used frozen ground beef, which is surprisingly similar to the real thing. Who said you had to give up the pleasures of meat when you became vegetarian? Of course, if you do eat meat, we're not here to judge, feel free to use the real deal!

INGREDIENTS

Vegetarian Beef

1 ½ cups (165g) vegetarian beef, ground
1 (130g) onion, small
3 cloves (15g) garlic, minced
1 (34g) jalapeno, minced
¼ tsp (2g) chili powder
1 tsp (5g) cumin, ground
¼ tsp (2g) salt
2 tbsps (28g) butter, unsalted

Taco and Fillings

5 (68g) taco shells
½ cup (25g) cheese, shredded
1 (137g) tomato, diced
1 (150g) avocado, diced
2 stalks (26g) green onions, finely chopped
½ cup (120g) salsa

INSTRUCTIONS

  1. Melt the butter in a frying pan on medium heat. 1 minute
  2. Saute the onion, garlic, and jalapeno until the fragrance of them fill the kitchen. 2 minutes
  3. Add the ground vegetarian beef, chili powder, cumin and salt and cook until hot, about 3 minutes. 3 minutes
  4. When the beef is ready, assemble the tacos in the following order -- beef, cheese, avocado, tomato, green onions, and salsa. Serve while hot and crispy! 1 minute
