Avocado pickled daikon sushi long roll

The avocado and pickled daikon are like yin yang in this sushi roll. The daikon is crunchy and salty, while the avocado is smooth and sweet. Spruce up your avocado rolls with this recipe!

INGREDIENTS

Rice

1 ½ cups (300g) sushi rice
2 inches (20g) kombu
2 cups (473g) water
2 tbsps (28g) sake
¼ cup (60g) vinegar
½ tsp (3g) salt
1 tsp (7g) honey

Sushi

½ cup (60g) pickled daikon, matchsticks 1 minute
1 (200g) avocado, matchsticks 1 minute
4 (12g) seaweed sheet, toasted

INSTRUCTIONS

  1. Wash the rice until the water is clear. 1 minute
  2. Add the kombu, 2 cups of water, and sake to the rice and cook it in the an electric rice cooker. 30 minutes
  3. While the rice is cooking, combine the vinegar, salt, and honey. Set aside. You will add this mixture to the rice after it has cooked. 1 minute
  4. Once the rice is ready, pour the vinegar mixture into the rice and mix thoroughly with a rice paddle. Use a cutting action and fan the rice to blow away the steam. This is best achieved in a large container with a lot of surface area compared to the amount of rice you cooked. The objective is to create flavorful, glossy sushi rice. 1 minute
  5. Construct the sushi rolls with a bamboo sushi mat. Place one seaweed sheet, also known as sushi nori, on the mat and cover with an even layer of sushi rice. Place a horizontal line of pickled daikon and avocado on top of the rice in the center of the sheet. Roll the sushi with the help of the bamboo mat. Repeat until you've finished the rice and other ingredients. 3 minutes
  6. Cut each roll into 8 pieces and serve immediately with soy sauce, wasabi paste, and pickled ginger. 1 minute
