Natto sushi long roll

Sushi was a great invention and great for lunch boxes. They are easy and fun to make and the options are endless. For this recipe, we've got an unique filling called natto, which is fermented soy beans. Some love it, some hate it, but decide for yourself. You can buy natto in the refrigerated or frozen section at any Japanese grocery store. I personally love it and use this dish as a test of authenticity for sushi restaurants I try.

INGREDIENTS

Rice

1 ½ cups (300g) sushi rice
2 inches (20g) kombu
2 cups (473g) water
2 tbsps (28g) sake
¼ cup (60g) vinegar
½ tsp (3g) salt
1 tsp (7g) honey

Sushi

¼ cup (44g) natto
1 tsp (5g) soy sauce
2 tbsps (28g) scallion, finely chopped 1 minute
4 (12g) seaweed sheet, toasted

INSTRUCTIONS

  1. Wash the rice until the water is clear. 1 minute
  2. Add the kombu, 2 cups of water, and sake to the rice and cook it in the an electric rice cooker. 30 minutes
  3. While the rice is cooking, combine the vinegar, salt, and honey. Set aside. You will add this mixture to the rice after it has cooked. 1 minute
  4. Prepare the natto. Defrost the natto until it is room temperature. Add soy sauce and mix thoroughly. 1 minute
  5. Once the rice is ready, pour the vinegar mixture into the rice and mix thoroughly with a rice paddle. Use a cutting action and fan the rice to blow away the steam. This is best achieved in a large container with a lot of surface area compared to the amount of rice you cooked. The objective is to create flavorful, glossy sushi rice. 1 minute
  6. Once the rice is ready, construct the sushi rolls with a bamboo sushi mat. Place one seaweed sheet, also known as sushi nori, on the mat and cover with an even layer of sushi rice. Place a horizontal line of natto and chopped scallions on top of the rice in the center of the sheet. Roll the sushi with the help of the bamboo mat. Repeat until you've finished the rice and other ingredients. 3 minutes
  7. Cut each roll into 8 pieces and serve immediately with soy sauce, wasabi paste, and pickled ginger. 1 minute
