Crispy scallion pancakes with zesty ginger dipping sauce

This classic Chinese snack is great finger food!

INGREDIENTS

Scallion Pancakes

2 ½ cups (g) all-purpose flour
½ cup (g) water, cold
½ cup (g) water, boiling water
5 stalks (g) scallion, finely chopped
1 tbsp (g) sesame oil, toasted
4 tbsps (g) canola oil
1 tsp (g) salt
1 tsp (g) black pepper

Ginger Dipping Sauce

2 tsps (g) ginger, fresh
¼ cup (g) soy sauce
¼ cup (g) lemon juice
2 stalks (g) scallion, finely chopped
1 (g) jalapeno, finely minced
1 (g) chili pepper, red, finely minced
2 (g) garlic clove, finely minced
1 tsp (g) sugar

INSTRUCTIONS

  1. In a mixing bowl, mix 1 1/4 cup of flour, 1/2 tsp salt, and 1/2 cup of cold water. Knead the dough until it has been thoroughly incorporated.
  2. In another mixing bowl, mix 1 1/4 cup of flour, 1/2 tsp salt, and 1/2 cup of hot water. Stir with a utensil. Once it has cooled sufficiently to touch, use your hands to knead the dough thoroughly.
  3. Form each dough into logs about 8-9 inches in length and about 1.5 inch in diameter.
  4. Cut each log into 8 equal sized pieces.
  5. Stack one piece of hot dough with one piece of cold dough and roll out into a circle about 6-7 inches in diameter, using a rolling pin.
  6. Brush the rolled out dough with sesame oil and sprinkle chopped scallions and cracked pepper on top. Spread evenly.
  7. Starting from one edge of the dough, roll up the dough into a cigar shape. Then roll the "cigar" into a spiral bun, like a cinnamon bun.
  8. Using the rolling pin, roll out this spiral bun into a flat pancake about 5 inches in diameter.
  9. With a frying pan, pan fry each pancake with canola oil. About 4-5 minutes on each side on medium high heat.
  10. Serve immediately with the ginger dipping sauce.
  11. To make the sauce, simply mix all ingredients together in a glass bowl.
