Egg in Brioche Toast

Egg in brioche toast

A runny yolk inside a luscious, buttery brioche toast. Now, that's decadent. This is an awesome hors d'oeuvre to serve at your next party, and it takes no time to make! I've made this with vegetarian ham on top, but feel free to use the real thing!


All Ingredients

2 tbsps (28g) butter
3 slices (150g) broiche
6 (90g) egg yolk
2 slices (50g) ham, vegetarian
1 sprig (2g) parsley


  1. In a large frying pan, preheat the pan and melt the butter on low heat. 1 minute
  2. Cut each slice of brioche in half for a total of 6 toasts. 1 minute
  3. Using a round cutter slightly smaller than the circumference of an egg yolk, cut a hole in each toast. 1 minute
  4. Place toasts onto the pan and turn the heat to medium. 1 minute
  5. In each hole, place an egg yolk in the hole and cook for a few minutes until the sides of the yolk has cooked and stuck to the brioche. The yolk shouldn't be cooked all the way through, since we want runny yolks. 5 minutes
  6. Garnish with ham and parsley and enjoy immediately!
