Pumpkin Oatmeal Cookies


Pumpkin oatmeal cookies

A fall twist to regular oatmeal cookies! Try adding pine nuts or cranberries for added texture and tang. Great for Halloween and Thanksgiving!

INGREDIENTS

Spice

¼ tsp (1g) cinnamon, ground
¼ tsp (1g) ginger, ground
tsp (1g) clove, ground
tsp (1g) nutmeg, ground
tsp (1g) allspice, ground

Cookie Dough

3 cups (260g) rolled oats
¾ cup (105g) all-purpose flour
½ cup (113g) butter
1 cup (210g) brown sugar
1 cup (253g) pumpkin puree
1 tsp (4g) vanilla extract
½ tsp (2g) baking powder
½ tsp (3g) salt

INSTRUCTIONS

  1. Preheat the oven to 375F degrees. 1 minute
  2. In an electric mixer, cream the butter with the brown sugar until light and fluffy. Be sure to scrap down the sides of the bowl. 3 minutes
  3. Add the pumpkin puree, vanilla extract, salt, and spices. 1 minute
  4. Add the flour, baking powder and mix thoroughly until well-combined. 1 minute
  5. Add the rolled oats and mix until well-combined. 1 minute
  6. Form 24 1.5" balls and flatten the balls into 2-3" cookies on a baking pan lined with foil. 1 minute
  7. Bake for about 15-20 minutes or until golden brown. 1 minute
  8. Optionally, you can dust with powdered sugar, or simply enjoy straight out of the oven! 1 minute
