Fragrant Tomato Garlic Stew with Noodles

Fragrant tomato garlic stew with noodles

This is an authentic Chinese recipe from my mother. Traditionally, it is cooked with beef, but we've modified it to be vegetarian. Feel free to substitute your choice of protein.

Chinese 5-spice Mix

tsp (g) cinnamon, ground
tsp (g) fennel, whole
tsp (g) ginger, ground
tsp (g) cumin, ground
tsp (g) clove, ground

Tomato and Garlic Stew

7 (g) tomato
2 cups (g) vegetarian protein, large chunks
6 (g) garlic cloves
1 (g) onion
cup (g) soy sauce
2 tbsps (g) sugar

2 cups (g) Asian noodles, dry

  1. Boil a large pot of water.
  2. Place 1 tomato into boiling water for 10 seconds.
  3. Remove tomato from water. Peel tomato.
  4. Repeat steps 1-3 for remaining tomatoes.
  5. Using a chef's knife, cut tomatoes into large chunks. Remember to discard tomato seeds, or reuse them in another recipe.
  6. Using a chef's knife, finely chop the garlic and onion.
  7. Place tomatoes, garlic, and onion into a large pot and fill with enough water to cover all the ingredients.
  8. Add the soy sauce, sugar, and spices in a tea bag filter to the pot.
  9. Heat the pot to a boil, then lower the temperature to a slow simmer. Stew for 30 minutes.
  10. Add the vegetarian protein or your choice of protein. Stew for another 30 minutes.
  11. To serve, cook the noodles according to its package instructions.
  12. Place cooked noodles into a bowl and pour stew over noodles.
  13. Garnish with finely chopped scallions and cilantro and serve hot!
