This recipe calls for Quorn's frozen, naked chicken cutlets. They shred just like real chicken which is key to this salad.
5 Quorn chicken cutlets, defrosted
5 stalks of celery
1 cup of mayonnaise
1 tbsp white pepper
1 onion, minced finely
1 apple, minced finely
1 bunch tarragon, fresh
Salt to taste
1 loaf of sliced whole wheat bread
With a fork, shred the chicken into small pieces.
Slice the celery into thin slivers about 1" long.
Finely mince the tarragon leaves, discard the stems.
Combine all ingredients except the bread and toss thoroughly.
Store the salad in the fridge until ready to eat. Make the sandwiches when ready.
(Optionally) sprinkle some Old Bay Spice on the salad when making sandwiches.
