pizza dough (homemade or ready-made), enough for two 8" pizzas
4 bunches broccoli
4 garlic cloves
1 cup tomato paste
15 kalamata olives, pickled, pitted
1 tbsp capers
crushed red peppers
1/2 cup tomato, freshly chopped
2 cups cheese, shredded, any kind, your choice
salt to taste
1/4 cup cilantro, freshly chopped (garnish)
Preheat the oven and pizza stone to 450F. If your oven can go higher, I recommend 500F.
Cut off all the broccoli florets and set aside. You can also use the stem, but I recommend peeling its tough skin before using it.
In a food processor, finely chop the garlic and olives.
Mix the garlic, olives, capers, red peppers into the tomato paste. Salt to taste.
Roll out the pizza dough to two 8" pizzas.
Top each pizza with sauce, broccoli florets, and cheese.
Bake the pizzas for 8-15 minutes, depending on your oven.
