Lemon Royal Icing

This is a basic royal icing recipe that you can use for icing cookies. It's quite thick, so you can thin out the icing to the consistency you need.


1kg powdered sugar, sifted
50g dry egg white powder
5g cream of tartar
55ml fresh lemon juice, strained
110ml tap water
1tbsp vanilla extract


You'll need an electric mixer, but you can do it by hand as well.

  1. In the mixer bowl, combine the egg white powder, lemon juice, and water and whisk until foamy, like you are making meringue.
  2. Switch to a paddle attachment.
  3. Add the cream of tartar and sifted powdered sugar.
  4. Mix on medium speed for 3-4 minutes.
  5. Add the vanilla extract.
  6. Mix on medium speed for another 3-4 minutes.
  7. Store in a food container and cover with plastic wrap. Be sure that the plastic wrap touches the icing like a film on the top. This will prevent the icing from hardening up on top.

Thank you! Yes, the colors are mixed in later. This recipe makes a lot of icing, so one can make many different colors for decorating cookies! :)
