Just a woman who loves cooking and collecting books. Oh, I also really like chinchillas. :)

This drink always reminds me of Hawaii or the Bahamas. It is a favorite in our family and it is good virgin or with rum. Sometimes, I wonder how this recipe was developed, because you basically make a Pina Colada and pour it on pureed strawberries. In this recipe, I've used bananas to sweeten and did not add any processed sugars. Feel free to adapt and sweeten to taste. This recipe makes 4 servings.

Pina Colada:
2 bananas
1 cup coconut milk
2 cups ice
2 cup pineapple chunks
1/2 cup rum (optional)

Strawberry Puree:
2 cup strawberries
2 cup ice
1/2 cup rum (optional)

strawberry slices
pineapple slices
umbrella toothpicks

  1. In a blender, blend the pina colada ingredients until smooth. Pour out into a pitcher and refrigerate while you blend the strawberries.
  2. In the same blender, blend the strawberry, ice, and rum (optional) until smooth. Pour the strawberry puree equally into 4 glasses.
  3. Carefully pour the pina colada over the strawberry puree in each glass.
  4. Garnish and enjoy immediately!
